If you do want to wear armour, use light armour. Simply filling out the sword branch of the skill tree will give you loads of strength. Willpower is another important stat because greatswords consume stamina really damn fast. The heaviest swords are about 20 units in weight, so if you gather that much Endurance you'll be able to wield greatswords more comfortably. Greatswords are so strong that you won't really need armour anytime soon. The reason I say 34 instead of 50 (the soft cap) is because two-handing a weapon multipliers your Strength by 1.5, and 34*1.5 gets you to the soft cap. You won't ruin your character by just winging it with your stat allocations, as long as you end up with 34 Strength. If you can't roll well, put more into Endurance, and so on. If you keep running out of stamina, put more into Willpower. Keep your Strength high enough that you can one-shot most of the regular enemies, and you'll want 34 Strength by the time you're done. It doesn't matter too much which order you go about improving your character.

If you're on PC, I made a mod that lets them drop from certain enemies, which lets you respec your character a lot easier. There isn't a level cap, and there are a few Gray Pearls scattered around that let you undo some of your node selections (but not many). So as long as you've got enough to use the weapon you want to use you could have your points scattered all over the grid and it wouldn't matter too much. Putting points into Strength nodes, or greathammers, or swords, or axes/maces all raise your Strength.
